In Spanish, salsa can refer to any type of sauce, but in English it usually refers to the spicy, often tomato-based sauces typical of New Mexican cuisine, particularly those used as dips.

Salsa Recipe

4 large tomatoes
3 jalapeno peppers
2 cloves garlic
1/2 cup onion
1/2 tsp. oregano
Salt to taste

Blender

Preparation

Combine tomatoes, jalapeno peppers, garlic, and onion in a blender. Blend until ingredients are diced small.
Add oregano and salt to taste.

Yield: About 8 Cups

Helpful Hints

One can of tomatoes may be substituted for fresh tomatoes. Salsa can be frozen. Promptly refrigerate unused portions. Serve with tortilla chips.
